आम का आचार- 2 kg आचार के लिए सामग्री -🥭 2 किलो कच्चे आम 3 टेबल स्पून मेथी दाना 3 टेबल स्पून सौंफ 3 टेबल स्पून राई 2 टेबल स्पून पीली सरसों 1 टेबल स्पून लाल मिर्च पाउडर 3 टेबल स्पून कश्मीरी लाल मिर्च पाउडर 1 टीस्पून हींग 2 टेबल स्पून हल्दी 2 टेबल स्पून कलोंजी 5 टेबल स्पून नमक या स्वादानुसार 600 ग्राम सरसो का तेल तैयारी - जिस बर्तन मे आचार रखना है उसे अच्छी तरह साफ करके धूप मे सुखा ले। विधि - आम को धोकर अच्छे से पोंछ ले ओर उसका पानी सूखा दे और आम को अपने मनचाहे आकार के टुकड़ों में काट कर ले।। एक पतले कपड़े पर डालकर इनको 5 घंटे के लिए धूप में डाल दें या फिर पंखे के नीचे सुखा लें जिससे की आम का सारा पानी सूख जाए। सौंफ, धनिया,राई,पीली सरसों और मैथी को भूनकर दरदरा पीस लीजिये । मसाला भूनने से इसमें मौजूद नमी खत्म हो जाती है । कढ़ाई में तेल डालकर धुआं उठने तक गरम कर लीजिये, फिर तेल को ठंडा कर लीजिए। तेल को गर्म करने से इसमें मौजूद अशुद्धियाँ समाप्त हो जाती हैं जिससे अचार ज्यादा समय तक सही रहता है दरदरे पिसे मसाले, कलौंजी, हींग, हल्दी पाउडर को एक साथ मिला लीजये फिर इसमें आवश्यकता अनुसार ठंडा किया हुआ सरसों का इतना तेल डालिये की मसाला आम के टुकड़ो पर चिपक जाए सबको अच्छी तरह मिक्स कर लीजये। बाकी बचा तेल रखा रहने दीजिये इसके बाद आप कटे हुये आम के टुकड़े इस तैयार मसाले में डाल कर मिला दीजिये, और साथ ही इसमें नमक और लाल मिर्च पाउडर डाल दीजिये। चमचे से चलाते हुये आम और मसाले को अच्छी तरह मिला दीजिये अचार बन गया है, लेकिन आम के टुकड़े अभी पूरी तरह मुलायम नहीं हुये है । अब इस अचार को ढककर 3 दिन के लिए छोड़ दें दिन में एक बार किसी सूखी चम्मच (जिस पर पानी न लगा हो)) से मिक्स कर दे 13 दिन बाद अचार को किसी कांच की बरनी मे भरकर रख दे और दिन में एक बार अचार को चलाकर ऊपर नीचे कर दीजिये अचार में बचा हुआ तेल इतना डालें की अचार तेल मे डूबा रहे। #aamkaachar #recipe #food #cooking #eat #foryoupageシ #trendingpost #viralpost #healthy #tasty #writtenpost #cookingpost #recipepost #devikacooking
